Ingredients:
Olive oil
1 small onion, diced
3 cloves garlic, minced
2 cans cannellini (white) beans, rinsed
4 cups chicken or vegetable broth
1 teaspoon Italian seasoning
Salt & pepper to taste
A handful of fresh spinach or kale
Optional: parmesan rind or grated parmesan for serving
Instructions:
Heat olive oil in a pot over medium heat.
Sauté onion until soft, then add garlic.
Stir in beans, broth, seasoning, salt, and pepper.
Simmer gently for 15–20 minutes.
Add greens just before serving and let them wilt.
Finish with parmesan if desired and serve warm.
