🍲 Recipe: Tuscan White Bean Soup

This is one is of my favorite recipes when I want the house to feel warm, welcoming, and effortlessly elegant. It’s simple, nourishing, and perfect for quiet evenings or casual entertaining.

Ingredients:

  • Olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 2 cans cannellini (white) beans, rinsed

  • 4 cups chicken or vegetable broth

  • 1 teaspoon Italian seasoning

  • Salt & pepper to taste

  • A handful of fresh spinach or kale

  • Optional: parmesan rind or grated parmesan for serving

Instructions:

  1. Heat olive oil in a pot over medium heat.

  2. Sauté onion until soft, then add garlic.

  3. Stir in beans, broth, seasoning, salt, and pepper.

  4. Simmer gently for 15–20 minutes.

  5. Add greens just before serving and let them wilt.

  6. Finish with parmesan if desired and serve warm.

Fall Feels: Pumpkin Spice, Spooky Nights, and Snuggly Sweaters

 


    Can you feel it?

That crisp air, the crunch of leaves under your feet, and the smell of pumpkin spice everything wafting through the air. Yep, it’s official – fall has arrived, and I’m here for it!

Let’s talk about the pumpkin spice craze for a hot second. I mean, who knew that a simple blend of cinnamon, nutmeg, ginger, and cloves could take over the world? From lattes to candles, and even dog treats (I’m not kidding!), it seems like everything’s getting the pumpkin spice treatment. And you know what? I’m not mad about it. There’s something so comforting about that warm, spicy scent that just screams

 “fall is here!”

But wait, there’s more to fall than just pumpkin spice (shocking, I know). We’ve got Halloween creeping up on us, and I don’t know about you, but I’m already planning my costume. Whether you’re into spooky vibes or just in it for the candy, Halloween is like the ultimate fall party. Jack-o’-lanterns, haunted houses, and bite-sized candy bars – what’s not to love? 

And can we take a moment to appreciate sweater weather? It’s like a warm hug for your body. There’s nothing quite like cozying up in your favorite oversized sweater, grabbing a hot drink (pumpkin spice latte, anyone?), and watching the leaves change color. 

It’s the perfect excuse to Netflix and chill – literally!

Fall is also prime time for all those Instagram-worthy moments. Apple picking, pumpkin patches, hayrides – it’s like Mother Nature created a whole season just for social media. But hey, I’m not complaining. Those photos are too cute to pass up!

Cannon Beach, Oregon: Where Magic Meets the Pacific


Hey there, beach bums and nature lovers! Buckle up, because we’re about to take a virtual trip to one of the most stunning spots on the Oregon coast - Cannon Beach! 

First things first, let’s talk about the elephant (or should I say, rock) in the room - Haystack Rock. This 235-foot sea stack is like Mother Nature’s own version of a skyscraper, and trust me, it’s way more impressive than anything you’ll see in the concrete jungle. It’s the perfect backdrop for your Instagram shots, but more importantly, it’s a haven for puffins, seagulls, and starfish. Just remember, look but don’t touch, folks! We’re guests in their home. 

Now, if you’re anything like me, you’re probably wondering, “But Laura, what about the beach itself?”  Let me tell you - it’s like walking on a carpet made of crushed pearls. The sand is so soft, you’ll want to ditch your tennis shoes or flip-flops and go barefoot.



Speaking of sunny days, here’s a little insider tip: pack layers! The weather at Cannon Beach can be as unpredictable as my hair on a humid day. One minute you’re working on your tan, the next you’re huddled under a blanket watching the fog roll in. But hey, that’s all part of the charm! 

For all you foodies out there, Cannon Beach has got you covered. From fresh seafood that’ll make you feel like you’ve died and gone to pescatarian heaven, to cozy cafes perfect for sipping a latte while watching the waves.

Whether you’re looking for a luxe hotel with ocean views or a quaint little vacation rental, you’ll find your perfect home away from home.

And let’s not forget about the town itself! Cannon Beach is like stepping into a postcard of the perfect beach town. Art galleries, boutique shops, and the kind of local charm that’ll have you considering a permanent move. Just don’t blame me when you start browsing real estate listings!

A Time for Reflection: Navigating Grief and Finding Strength

 Dear friends and followers,

I hope this message finds you well. You may have noticed I've been a bit quiet online lately, and I wanted to take a moment to share why. Yesterday marked a somber milestone for our family - the two-year anniversary of my granddaughter being born at rest.

These past days have been filled with a whirlwind of emotions. My heart aches for my son and his girlfriend, and for our entire family as we continue to navigate this difficult journey of grief. It's a pain that doesn't fade easily, a void that can't be filled.

Grief is a strange and unpredictable companion. It ebbs and flows, sometimes catching us off guard when we least expect it. There's no guidebook for how to handle these moments, no perfect way to process the loss of a precious life that barely began.

During this time, I've found solace in the love and support of those around me. I'm reminded of the strength we find in each other, the comfort in shared memories, and the healing power of simply being there for one another.

To those who have reached out, sent kind thoughts, or simply understood our need for space - thank you. Your compassion means more than words can express.

As we move forward, we carry our little angel in our hearts. We honor her memory by cherishing each day, loving a little harder, and finding beauty in the small moments of life.

To anyone out there who might be going through a similar experience, please know that you're not alone. Grief is a journey, and it's okay to take it one day at a time. Be gentle with yourself, allow yourself to feel, and don't hesitate to lean on others when you need support.
